A Golden BBQ side dish

         Baked golden mushroom Potatoes


2 lbs. yukon gold potatoes-diced or cubed
1 can mushroom soup 
1/2 c butter-softened
2 T chives
1/3 c milk
salt, pepper, garlic powder- to your tasting 

Preheat oven to 375- using about 2T of your butter-butter an 8x8 baking dish

Combine and mix all of your ingredients together and pour into your buttered baking dish. Cover with foil and bake 45 mins to and hour- until potatoes are soft- remove foil and bake for about 10 minutes longer until potatoes are lightly brown.

QUICK PIZZA ideas

Hey there folks- yes, yes I know I haven't been a very reliable blogger and really need to get it together if I ever plan on getting anyone out there to tune into my blog much less become a follower of my blog. With spring finally upon us I would like to start posting some early spring bbq-ing ideas but firstI do think its important that I post some of my pizza ideas that I promised awhile back. There really is no right or wrong pizza recipes-when it comes to making pizza or pizza snacks- get in there and use your imagination and some creativity and you'll be amazed at how delicious your creativity will be!! So lets get started:

pizza bagels       
 bagels - split bagels apart-middle up                       
pizza sauce or jar spaghetti sauce       pepperoni   mozzarelli  grn bell pepper  onion   (any type of topping you like)
 spread sauce on bagels- add your toppings- cheese last- bake at 450 about 10 minutes or until cheese melted- enjoy!!
   
English muffin pizza- follow same directions as bagel pizza
French Bread Pizza-split bread open-toast for about 5 mins. let cool- add toppings finishing off with 
   cheese- bake until cheese is melted and lightly browned.

 CIABATTA bread- flatbread  etc.... 

SO THE NEXT TIME YOUR IN THE MOOD FOR SOME PIZZA AND WANT TO TRY A DIFFERENT LIL TWIST- TRY ONE OF THESE IDEAS!!

Pasta Salad

Sorry I haven't been around lately, I've been on an adventure swinging around the trees in the good ole cheese state tipping cows. Just kidding, I've been out in WI visiting my daughter and mingling with the locals. I'll tell ya they sure are a different breed of orangutans our here! I know I had said I'd be posting some Italian dishes, here soon but to hold ya over til then I've decided to give ya a easy side dish first. This pasta salad is not only easy but very versatile, you can pretty much add anything you want in the mix.

Shown below is the most common ingredients I like to use but these can easily be omitted as well. 
  • 1 Box of Rotini Noodles
  • 1 Large Bottle of Italian Dressing
  • Green Bell Pepper
  • Red Onion
  • Cherry Tomatoes
  • Cucumbers
  • 1 Can Black Olives
  • 1 Jar Green Olives
  • Pepperoni 
  • Shredded Chedder Cheese
Cook pasta according to package, then set aside to cool. Cut up all veggies, then mix pasta, dressing and veggies together. After those are mixes  add pepperonis and cheese, mixing well. Then refrigerate for at least 2 hours. You may need to add more dressing  after letting sit a few hours, because the noodles will  absorb some of your dressing.

This dish is excellent for cookouts, side dish or even a main course meal. For you health conscious folks you can make a lighter version by using  lite or fat free dressing and using turkey pepperoni and eliminate the cheese and jarred olives. Like I said this is a recipe that can be played up or played down to your liking.

"No monkeys about it- its a Banana chocolate chip cookie"

Hey folks- if you like banana bread - you will love this cookie recipe! You'll have your friends and family swinging from the trees to get ya to make them these!

BANANA CHOCOLATE CHIP KOOKIES

preheat oven 400   lightly greased cookie sheet

3 c flour
2 t baking powder
1/2 t salt
1/4 t baking soda
1 c sugar
2/3 c butter-softened
2 eggs
1 t vanilla
1 c mashed bananas
2 c white chocolate chips
1 c chopped walnuts ( optional)

Cream butter with the sugar until light and fluffy, beat in the eggs and vanilla. Stir in the bananas and then add the dry ingredients stirring until well combined. Stir in chocolate chips and nuts. Drop by rounded teaspoonfuls onto greased cookie sheet. Bake 12 to 15 minutes

    Howdy there folks and welcome back to Kooky's world- sorry for not having any posts available since last week. I no sooner started my blog and turn around and had puter issues - hopefully taken care of - we'll just have to cross our fingers and see. Got a few more really easy sweet treat recipes I'm gonna post and then were gonna take a lil ride to the more savory side of things- and where might that be your thinkin-who likes PIZZA? Its gonna be a pizza party! Well scroll on down and lets get started with today's sweet treat.


                                       KOOKY BARS

1 box german chocolate cake mix
1/2 c butter
1/2 c brown sugar
2 T water
1 egg
2 c semi sweet chocolate chips
1 c chopped walnuts (optional)

preheat oven 350      grease 9x12 cake pan

Cream butter and brown sugar together, add cake mix and stir in egg and then stir in the water(batter will be x-tremely stiff) mix in chocolate chips and nuts. Spread into well greased 9x12 cake pan. Bake 30-35 mins. Cool completely-then cut into bars

Starting out SWEET and SIMPLE

Hey there folks- thank you for stoppin by and seeing what kooky's up to. Who loves cheesecake but doesn't want or like all the long drawn out steps that can go into making a delicious cheesecake? Have no fear that is why Kooky is here. I have a very simple and delicious no bake cheesecake recipe to share with you-follow me and we'll get started.

     Kooky's No Bake Cheesecake

   1 8oz. pkg softened cream cheese             
   1/3 c lemon juice (bottled lemon juice is fine)
    1 can sweet condensed milk
    1/2 c sour cream
   1 graham cracker crust

   Beat cream cheese until fluffy and then gradually add condensed milk, stir in lemon juice and sour cream- blend ingredients well.Put bowl in fridge and chill for about 15 mins. After chilling in fridge- pour into graham cracker crust. Chill in fridge for at least 2 hours before serving. You can serve it plain or garnish it with fresh fruits-such as raspberries and blueberries, or fresh strawberries, or your favorite canned pie toppings- Enjoy!!
